Oak Dale Wines were created in December 1999 when an alliance was formed between winemaker, Robert Zagar of Summerhill Estate and the growers Anne and Glen Cook from Oak Dale Vineyards, It was named in honour of the 4th generation Ryan family owned dryland mallee farm. Typically this wheat farm was set amongst the native gum, she-oak and quangdong trees in the Victorian Sea Lake district.
The vision was to create a range of premium quality wines. To achieve this, premium grape varieties are selected and traditional wine making methods are applied. All vines are developed from their own rootstock. They are hand pruned with close attention paid to the number of buds left, so as to produce lower cropping levels than would be normally achieved. The grapes are allowed to hang on the vines until they reach the required level of development and are then hand harvested ready for crushing. The crushing is done on the estate and is closely monitored by the winemaker and the grower. Every individual bunch is inspected for possible pest or disease damage. Bunches that fail the inspection are discarded. The juice and skin are stabilised and then transported to the winery which is located on the Mornington Peninsular where primary fermentation is initiated. After this is complete the wine is then pressed by hand in a small basket press and then left to settle. After racking it is placed in a selection of American and French oak where malolactic ferment takes place. After slow aging in oak the wines is then bottled ready for release.
